Planning a trip from London by train?

Interested in going on a trip by train. Looking for the ideal route.Not interested in sightseeing, more like getting on a train without a specific destination in mind, just getting off wherever I like, getting to know the countryside, taking pictures. Starting point London, available time to spend maximum a week. Any suggestions? details will be appreciated.
